Lemon Crinkle Top Cookies

- 2 pkgs. "JIFFY" Golden Yellow Cake Mix
- 1/4 cup oil
- 1 egg
- 2 Tbsp. lemon extract
- 1/2 cup flaked coconut (optional)
Preheat oven to 350°, grease baking sheet.
Blend all ingredients until moist. Drop by teaspoon on prepared baking sheet. Bake 11-13 minutes or until lightly browned around the edges.
