Oatmeal Muffins

(12-15 Muffins)

  • 1–1/2 cups "JIFFY" Baking Mix
  • 4 Tbsp. margarine or butter, softened
  • 1/2 cup brown sugar
  • 3 Tbsp. instant vanilla pudding mix
  • 1–1/3 cups quick oats
  • 1 cup milk
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 eggs

Preheat oven to 400°, grease muffin pan or use paper liners.
Cream margarine or butter and brown sugar together. Add remainder of ingredients and blend well. Pour batter into prepared muffin pan filling each cup about 3/4 full. Bake 14-16 minutes.
