Banana Coffee Cake
(12-15 Servings)
Cake
- 3 pkgs. "JIFFY" Banana Muffin Mix
- 1 box (3.4 oz.) instant vanilla pudding mix
- 1–1/3 cup milk
- 3 eggs
Frosting
- 1 pkg. "JIFFY" White Frosting Mix
- 4 oz. cream cheese, softened or 2-3 Tbsp. water
Filling
- 1 pkg. "JIFFY" White Frosting Mix or 1-1/2 cups powdered sugar
- 1 pkg. (8 oz.) cream cheese, softened
- 1 egg
Preheat oven to 350°, grease 13"x9" pan or 10 cup Bundt pan.
Combine muffin mix and pudding mix. Add milk, 3 eggs and blend well. Set aside. Combine filling ingredients and beat until creamy. Pour half of cake batter into prepared pan. Spoon filling over batter and pour remainder of batter over filling. Bake 42-50 minutes or until toothpick inserted into center comes out clean. Cool slightly before frosting. For frosting, combine frosting mix with cream cheese or water, blend until creamy. Frost cake while still warm.
