Cheesecake
(6-9 Servings)
Crust
- 1 pkg. "JIFFY" Oatmeal Muffin Mix
- 1/4 cup margarine or butter, softened
Filling
- 1 pkg. (8 oz.) cream cheese, softened
- 1 cup powdered sugar
- 2 Tbsp. lemon juice
- 1 container (8 oz.) whipped topping, thawed
Preheat oven to 375°.
Combine muffin mix and margarine or butter. Mix with fork until crumbly. Press crumb mixture into a 9" pie pan. Reserve 2 tablespoons of crumb mixture to sprinkle on top of filling. Bake crust for 7-10 minutes. Cool. Beat cream cheese, powdered sugar and lemon juice until well blended. Fold in whipped topping and pour into crumb crust. Sprinkle with reserved crumb mixure. Chill and serve.
