Zucchini Nut Bread
(1 Loaf)
- 2 cups "JIFFY" Baking Mix
- 1/2 tsp. cinnamon
- 1 cup sugar
- 1/3 cup chopped nuts
- 1/2 cup raisins
- 1 cup zucchini, grated (not peeled)
- 3 eggs
- 1/4 cup shortening
- 1/2 tsp. vanilla extract
Preheat oven to 350°, grease and flour 9"x5" loaf pan. Cream together shortening and sugar. Add remaining ingredients and mix well. Bake 50-55 minutes or until toothpick inserted in the center comes out clean. Remove from pan immediately. Cool on rack before slicing.
