Berry Berry Coffee Cake
(12-15 Servings)
Batter
- 3 pkgs. "JIFFY" Blueberry Muffin Mix
- 1/2 cup skim milk
- 1 cup sour cream
- 2 eggs
- 1 can (21 oz.) blueberry pie filling
Streusel
- 1 cup brown sugar
- 2/3 cup flour
- 1 tsp. cinnamon
- 1/3 cup margarine or butter
Preheat oven to 400°, grease 13"x9" pan.
Blend streusel ingredients together and set aside. Mix together muffin mix, milk, sour cream and eggs. Spread half of batter in prepared pan. Sprinkle half of streusel mixture over batter. Spread remaining batter over streusel and cover with pie filling. Sprinkle top with remaining streusel mixture. Bake 35-40 minutes.
