Potato Pancakes
(Eight 3" Pancakes)
- 1-1/4 cup "JIFFY" Buttermilk Complete Pancake & Waffle Mix
- 2 eggs
- 2 cups potatoes finely shredded uncooked (well drained)
- 1 tsp. salt
- 1 Tbsp. margarine or butter
Melt margarine or butter in 325° skillet. Blend all ingredients thoroughly. Drop batter onto skillet and fry pancakes on each side until golden brown. Serve while still hot.
