Easy Potato Pancakes

(Eight 3" Pancakes)

  • 1/4 cup "JIFFY" Buttermilk Complete Pancake & Waffle Mix
  • 1 Tbsp. margarine or butter
  • 2 eggs
  • 2 cups finely shredded uncooked potatoes, well drained
  • 1 tsp. salt

Melt margarine or butter in skillet heated to 350°.  Drop batter by spoonful onto prepared skillet.  Cook until lightly browned on both sides.
