Easy Potato Pancakes
(Eight 3" Pancakes)
- 1/4 cup "JIFFY" Buttermilk Complete Pancake & Waffle Mix
- 1 Tbsp. margarine or butter
- 2 eggs
- 2 cups finely shredded uncooked potatoes, well drained
- 1 tsp. salt
Melt margarine or butter in skillet heated to 350°. Drop batter by spoonful onto prepared skillet. Cook until lightly browned on both sides.
