Cherry Apricot Cobbler

(8-10 Servings)

  • 1 pkg. "JIFFY" Corn Muffin Mix
  • 2 cans (8-1/4 oz.) apricots
  • 2 cans (14-1/2 oz.) cherries
  • 1/2 cup sugar
  • 2 Tbsp. tapioca
  • 1/2 tsp. orange peel
  • 4 Tbsp. margarine or butter, softened
  • 1/2 cup milk
  • 3 Tbsp. sugar

Preheat oven to 375°, grease 9" baking pan.

Combine apricots, cherries, sugar and tapioca; set aside. Mix muffin mix, orange peel and margarine or butter with fork until mixture resembles coarse crumbs. Stir in milk just until mixture is moistened. Pour cherry mixture into prepared pan, top with batter. Sprinkle 3 tablespoons sugar over top. Bake 25- 30 minutes.
