Recipes: Buttermilk Complete Pancake & Waffle Mix

Cashew Cherry Cookies

  • 2 pkgs. (8 oz.)"JIFFY" Buttermilk Complete Pancake & Waffle Mix
  • 1/2 cup flour
  • 1 tsp. vanilla
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 cup margarine or butter
  • 1 pkg. vanilla milk chips
  • 1-1/2 cup dried cherries
  • 1 cup cashews, lightly salted

Preheat oven to 375°.

Blend together sugar, brown sugar and margarine or butter. Add eggs and vanilla; mix until smooth. In separate bowl, combine pancake mix and flour. Add to creamed mixture and stir in remaining ingredients. Drop by rounded teaspoonful onto un-greased baking sheet. Bake 11-14 minutes or until golden brown.
