Recipes: Golden Yellow Cake Mix
Hawaiian Cream Cake
(12-15 servings)
Cake
- 2 pkgs. "JIFFY" Golden Yellow Cake Mix
- 2 cups sour cream
- 2 eggs
- 1 cup flaked coconut
Filling
- 1 pkg. (8 oz.) cream cheese, softened
- 1/4 cup sugar
- 2 eggs
- 1 can (8 oz.) crushed pineapple, drained
Frosting
- 2 pkgs. "JIFFY" White Frosting Mix
- 1 pkg. (8 oz.) cream cheese, softened
Preheat oven 350°, grease 13"x9" baking pan.
Mix cake ingredients, on medium speed, for 2 minutes. In separate bowl, blend 1 package of cream cheese with sugar and mix well. Add eggs and beat until well blended; fold in pineapple. Put half of cake batter into prepared pan. Pour filling over batter and add remainder of batter over filling. Bake 38-40 minutes and cool. Combine frosting ingredients until blended; beat on high for 2 minutes. Frost cake and sprinkle with coconut (optional).
Variation: 32 to 36 cupcakes can be made. Line muffin tins with paper liners and fill 1/4 full with cake batter, add 1 tablespoon of filling and 1 tablespoon of cake batter. Bake 20-25 minutes and frost as above.
