Recipes: Buttermilk Complete Pancake & Waffle Mix

Potato Pancakes

(Eight, 3" Pancakes)

  • 1-1/4 cup "JIFFY" Buttermilk Complete Pancake & Waffle Mix
  • 2 eggs
  • 2 cups potatoes finely shredded uncooked (well drained)
  • 1 tsp. salt
  • 1 Tbsp. margarine or butter

Melt margarine butter in 325° skillet. Blend all ingredients thoroughly. Drop batter onto skillet and fry pancakes on each side until golden brown. Serve while still hot.
