Lemon Bars made with “JIFFY” Baking Mix.

Yields: 12 – 16 Bars
Preheat oven to 350°F. Grease an 8” square pan.
For crust, cream butter and sugar together. Add baking mix. Blend until just combined.
Press in bottom of pan, using floured hands if necessary. Bake 10 – 12 minutes. Let cool.
For filling, combine flour, sugar, and lemon zest in a bowl. Add eggs and lemon juice. Whisk to combine.
Pour over crust. Bake 22 - 25 minutes.
Cool. Dust with powdered sugar.
