Yields: Five 4" Corn Cakes
Preheat griddle to medium heat (350°F to 375°F). Griddle is ready when a few drops of water sizzle and disappear.
Combine ingredients until large lumps disappear.
Pour 1/4 cup batter onto lightly greased griddle.
When pancakes bubble around edge, flip. Pancake is done when bottom is lightly browned.
