Chocolate Chip Muffins made with “JIFFY” Baking Mix.
Yields: 12 Muffins
Preheat oven to 400°F. Grease a muffin pan or use paper baking cups.
Combine baking mix, sugar, and baking powder. Add milk, egg, vanilla extract, and butter. Mix well. Batter will be slightly lumpy. Stir in chocolate chips.
Fill muffin cups 2/3 full. Top with course sanding sugar. Bake 13 – 15 minutes.
