Double Chocolate Chip Muffins made with “JIFFY” Baking Mix.
Yields: 12 Muffins
Preheat oven to 400°F. Grease a muffin pan or use paper baking cups.
Sift baking mix and cocoa powder together. Add sugar and baking powder. Mix to combine. Add water, egg, vanilla extract, and butter. Mix well. Stir in chocolate chips.
Evenly distribute batter between muffin cups. Top with course sanding sugar. Bake 13 – 15 minutes, or until toothpick inserted in center comes out clean.
