Make pizza night extra fun with these Hot Honey Pizza Muffins! Made with “JIFFY” Hot Honey Corn Muffin Mix, each muffin has a touch of sweetness with just a little kick, topped with pizza sauce, gooey mozzarella cheese, and mini pepperonis. They’re perfectly sized for little hands, great for lunchboxes, and a hit at after-school snack time. Yields: 12 Servings
Preheat oven to 400°F. Thoroughly grease the cavities of a muffin pan.
For the crust, combine all ingredients. Blend well.
Scoop one heaping tablespoon of batter into each muffin pan cavity.
Spread one teaspoon of pizza sauce over the batter. Top each cup with mozzarella cheese and mini pepperoni.
Bake 14 – 16 minutes or until golden brown. Cool for 5 minutes, then remove from pan.
