Add a little heat to your bread basket with Jalapeño Spinach Corn Muffins made with “JIFFY” Corn Muffin Mix.
Yields: 16 – 18 Muffins
Preheat oven to 400°F. Grease muffin pans or use paper liners.
Pour muffin mixes into a bowl.
In separate bowl, beat eggs, milk and oil; stir into dry ingredients just until moistened. Fold in spinach, cheese and peppers.
Fill muffin cups 2/3 full. Bake 18 – 22 minutes or until lightly browned.
