Pumpkin Pecan Cobbler made with “JIFFY” Baking Mix.
Yields: 6 - 9 Servings
Preheat oven to 350°F.
For batter, combine baking mix, sugar and spices. Set aside.
Combine pumpkin, milk, butter and vanilla. Pour into dry mixture. Mix until combined. Spread into ungreased 8” baking pan.
For topping, combine sugars and pecans. Sprinkle over batter. Pour hot water over mixture. Do not stir.
Place on baking sheet. Bake 44 – 47 minutes or until center is set. Cool 5 – 10 minutes. Serve with whipped topping or ice cream (optional).
