Yields: 22 - 26 Cookies
Preheat oven to 350°F. Grease a baking sheet or line with parchment paper.
Cream butter and brown sugar. Add egg and pumpkin puree, blend well.
Add muffin mix, pumpkin pie spice, and flour. Mix until blended.
Stir in white chocolate chips. Drop by teaspoon onto baking sheet.
Bake 13 – 16 minutes. Cool slightly before removing from baking sheet.
