Yields: 6 – 8 Servings
Preheat oven to 375°F. Grease a 2 quart casserole dish.
For Spicy Crema, combine ingredients in small bowl and set aside.
For spoon bread, combine butter, whole kernel corn, cream style corn, sour cream, and eggs in a bowl. Add corn muffin mix, chili powder, smoked paprika, and cumin. Blend thoroughly.
Pour batter into dish. Bake 35 – 45 minutes or until center is lightly browned and firm.
Garnish with 1/2 cup crumbled cotija cheese and chopped cilantro. Serve with remaining cotija cheese and Spicy Crema.
