Vegetarian Cornbread (Johnny Cake) made with “JIFFY” Vegetarian Corn Muffin Mix is an alternative to a holiday favorite, for your vegetarian friends!
Yields: 9 – 12 Servings
Preheat oven to 400°F. Grease an 8″ square pan.
Stir ingredients together. Batter will be slightly lumpy. (For maximum crown, let batter rest for 3 or 4 minutes, stir lightly before filling pan.)
Pour batter into greased 8” square pan. Bake 16 – 20 minutes or until golden brown.

Egg Substitutes
3 Tbsp. aquafaba* (canned chickpea liquid)
or
1/3 cup unsweetened applesauce
