Blueberry Zucchini Bread made with “JIFFY” Blueberry Muffin Mix.

Yields: 1 loaf
Preheat oven to 350°F. Grease a 9” x 5" loaf pan or line with parchment paper.
Combine oil, sugar, and eggs in a mixing bowl. Add blueberry muffin mix and flour. Stir until just combined.
Using cheesecloth or a clean towel, firmly squeeze excess moisture out of grated zucchini. Add zucchini to batter and fold in.
Pour batter into prepared loaf pan. Bake 55 – 65 minutes or until golden brown.
